The farmers acquired the operation and established Caribbean Chicken Ltd., which would eventually become one of the country’s leading poultry producers.
“We started in 1988,” explains General Manager George Kornelsen. “Several farmers had been raising chickens for another company, but that company decided to shut down this branch, so they decided to let us buy this operation rather than shutting it down.”
What began as a relatively small enterprise with roughly a dozen farmers gradually expanded through consistent investment, operational improvements, and a focus on meeting Belizean consumers’ needs.
Unlike many businesses that experience dramatic growth spikes, Caribbean Chicken’s development has been marked by steady progress over decades.
“The growth has been very stable throughout the years,” Kornelsen says. “It has been a very steady market growth for the past 38 years.” That consistency has become one of the company’s defining strengths.
Building a National Food Supplier
While poultry remains at the heart of the business, Caribbean Chicken Ltd. has evolved into far more than a chicken producer.
Today, the company produces chicken, turkey, and eggs and distributes a broad range of grocery products to customers throughout Belize.

“What we produce is chicken, turkey, and eggs,” Kornelsen explains. “However, what we sell ranges much further, so we sell a full line of groceries at the retail level and then some at the wholesale level.”
This diversified approach has enabled the company to become an essential supplier across numerous sectors of the Belizean economy.
The company operates ten retail locations strategically positioned across the country. Together with a sophisticated delivery network, these stores enable Caribbean Chicken Ltd. to reach virtually every district and community in Belize.
“We are in every district of Belize,” says Kornelsen. “We pretty much go into all towns and villages to deliver weekly or twice a week.”
This extensive distribution capability has become one of the company’s most significant competitive advantages. “The tourist resort industry is where we have built our name a little bit as a supplier for your full shopping list,” Kornelsen notes.

This connection to tourism became especially clear during the COVID-19 pandemic. While many industries faced severe disruption, Caribbean Chicken demonstrated remarkable resilience.
“COVID didn’t affect whether people eat,” Kornelsen says.
Although the temporary closure of tourism created challenges, demand quickly returned as visitors began traveling again.
“Our biggest hit was that our tourism industry was closed, so all the foreigners didn’t come to eat here,” he explains. “As soon as tourism reopened in 2022, business was back to normal.”
The rapid recovery underscored both the essential nature of the company’s products and the strength of its customer relationships.
Investing in Modern Infrastructure
A major turning point in the company’s history came in 2006, when Caribbean Chicken opened a modern processing facility.
After nearly two decades of operating in its original plant, the growing demand necessitated a substantial upgrade.
“We worked in that first plant for 18 years until we could no longer process enough chicken,” Kornelsen recalls. “So in 2006, we opened our brand-new, state-of-the-art processing facility.”
The investment marked a transformative moment for the business, significantly enhancing production capabilities and operational efficiency.
Although Belize’s population and market size differ considerably from those of larger countries, the new facility positioned Caribbean Chicken to continue meeting growing domestic demand while improving product quality and consistency.
Another milestone arrived in 2017, when the company achieved HACCP certification, an internationally recognized food safety standard.
“I think it was 2017 that we got HACCP certified,” Kornelsen says.
The certification reinforced the company’s commitment to food safety and quality assurance and strengthened consumer confidence in its products.
Proudly Local
One of Caribbean Chicken Ltd.’s most distinctive characteristics is its commitment to supporting local agriculture and communities.
The company’s poultry production relies heavily on Belizean resources, generating economic benefits that extend well beyond its operations.
“All our products are produced locally,” says Kornelsen. “Even the grain used to feed the chickens is produced locally.”

This commitment to local sourcing strengthens Belize’s agricultural sector while reducing dependence on imported inputs wherever possible.
The company also prioritizes local employment. Despite labor shortages across many industries, Caribbean Chicken continues to focus on hiring Belizean workers.
“We hire locally. That’s all we do,” Kornelsen emphasizes. “We do not hire from abroad.”
The strategy reflects the company’s belief that investing in local talent is essential to business success and national development.
Navigating Workforce Challenges
Like many businesses throughout the Caribbean and beyond, Caribbean Chicken faces ongoing workforce challenges.
Labor shortages have become increasingly common across many sectors, and food production is no exception.
“We do find shortages,” Kornelsen acknowledges.
Interestingly, the challenge is not limited to highly specialized positions. The company also struggles to recruit workers for production roles that require less formal training.
“We struggle with finding enough people to work,” he says.
As a result, automation is becoming an increasingly important factor in the company’s future.
“We’re going to have to look at automating more,” Kornelsen explains.
Balancing technological advancement with workforce development will likely be a key focus as Caribbean Chicken continues to grow.
Understanding Consumer Preferences
Despite evolving consumer trends and the introduction of value-added products, Belizeans continue to strongly prefer traditional poultry products.
According to Kornelsen, whole chicken remains the company’s most popular offering by a considerable margin.

“The most popular product here in Belize is still whole chicken,” he says.
Approximately 40 to 45 percent of production is sold as whole birds, serving both restaurants and home cooks.
Beyond whole chickens, demand for fresh poultry cuts, including boneless breasts, wings, and legs, remains strong.
At the same time, Caribbean Chicken is actively exploring new product categories to meet evolving consumer lifestyles and preferences.
The company has expanded into sausages, patties, hot dogs, hams, and other value-added products. Although these currently account for a relatively small share of overall sales, management sees significant long-term potential.
“That is where we see more potential than anywhere else as far as future growth,” Kornelsen says.
The move reflects broader trends toward convenience and ready-to-eat food options while enabling the company to diversify its revenue streams.
Looking Ahead
As Caribbean Chicken Ltd. approaches its fourth decade in business, the company finds itself at another important crossroads.
Continued growth is creating new opportunities as well as new infrastructure needs.
Kornelsen notes that the company is once again approaching production capacity limits, necessitating future investment.
“In the next couple of years, we will need to invest in a bigger, faster plant again,” he says.
At the same time, recent investments have focused heavily on expanding retail and logistics.
The company has invested significant resources to expand its store network and strengthen its delivery capabilities, ensuring that customers throughout Belize continue to receive reliable service.
“We have invested heavily in stores and delivery trucks across the country,” Kornelsen explains.
These investments position Caribbean Chicken to continue strengthening its national presence and prepare for future production growth.
